  • 3 large apples, cored and diced
  • 2 large beets, boiled, peeled and diced
  • ½ red onion, diced
  • 2 blades shadon beni, finely chopped
  • Juice of ½ lime
  • 3 tbsp olive oil
  • 1½ tbsp mustard
  • 1 tbsp vinegar
  • Pinch of salt
  • Pinch ground black pepper


  1. Place apples in a glass bowl and add lime juice. Toss to coat.

  2. Add the beets, red onion and shadon beni. Mix gently to combine.

  3. In a small bowl, whisk together the olive oil, mustard, vinegar, salt and black pepper until well blended.

  4. Add to the salad and refrigerate until ready to serve.
