- 3 large apples, cored and diced
- 2 large beets, boiled, peeled and diced
- ½ red onion, diced
- 2 blades shadon beni, finely chopped
- Juice of ½ lime
- 3 tbsp olive oil
- 1½ tbsp mustard
- 1 tbsp vinegar
- Pinch of salt
- Pinch ground black pepper
Place apples in a glass bowl and add lime juice. Toss to coat.
Add the beets, red onion and shadon beni. Mix gently to combine.
In a small bowl, whisk together the olive oil, mustard, vinegar, salt and black pepper until well blended.
Add to the salad and refrigerate until ready to serve.
