- 1 large avocado, quartered and peeled
- 2 – 3 tomatoes sliced
- Arugula lettuce
- 1 large lime, halved
- Pinch of salt
- 2 – 3 tbsp balsamic vinegar
- Olive oil to drizzle
- Place equal amounts of arugula lettuce on the salad plates.
- Top with the tomato slices and then an avocado quarter.
- Squeeze lime juice over the avocado quarters to prevent browning and sprinkle with a little salt.
- Drizzle with the balsamic vinegar and olive oil. Refrigerate until ready to serve.
