AVOCADO WITH BALSAMIC VINEGAR & OLIVE OIL

Complexity: Easy

Ingredients:

  • 1 large avocado, quartered and peeled
  • 2 – 3 tomatoes sliced
  • Arugula lettuce
  • 1 large lime, halved
  • Pinch of salt
  • 2 – 3 tbsp balsamic vinegar
  • Olive oil to drizzle

Directions:

  1. Place equal amounts of arugula lettuce on the salad plates.
  2. Top with the tomato slices and then an avocado quarter.
  3. Squeeze lime juice over the avocado quarters to prevent browning and sprinkle with a little salt.
  4. Drizzle with the balsamic vinegar and olive oil. Refrigerate until ready to serve.
