BACON BREAKFAST MEDLEY

Ingredients:

  • 6 – 8 slices bacon
  • 1 cup chopped broccoli florets
  • 1 small red sweet pepper, sliced
  • ½ cup sliced fresh mushrooms
  • ½ small onion, sliced
  • ½ tsp ground black pepper
  • 1 tbsp honey

Directions:

  1. Place the bacon in a skillet over medium high heat. Let cook until desired crispness and set aside.
  2. In the same skillet add the sliced onions to the bacon fat. Add the sweet pepper and mushrooms. Let the vegetables cook for 2 minutes.
  3. Add the broccoli and the black pepper. Cook for a few more minutes just until the broccoli is crisp tender.
  4. Return the bacon to the skillet and toss with the vegetables. Add the honey and mixing just to coat the bacon and vegetables.
  5. Remove from skillet and serve hot with scrambled eggs.
