BAKE AND SHARK PIZZA

Ingredients:

  • FOR SHARK:
  • 2 Shark Fillets
  • 1 Small Onion
  • 2 Tbsp. chopped Garlic
  • 1 Tbsp. Salt
  • 1 Tbsp. Black Pepper
  • Juice of 2 Limes
  • Zest of 2 Limes
  • FOR SALSA:
  • 1 Medium Red Onion
  • 2 Slices of Pineapple
  • 1 Small Cucumber
  • 3 Small Tomatoes
  • 3 Blades of Chadon Beni
  • 5 Mint Leaves
  • 1?2 Tbsp. White Sugar
  • Juice of 1 Lime
  • Salt and Black Pepper to Taste
  • 1 Tsp. Pepper Sauce (optional)
  • BREADING:
  • 1 Cup of Flour
  • 1?2 Cup of Ground Crix
  • 1 Tbsp. of All Purpose Seasoning
  • 1 Tbsp. of Onion Powder
  • Pinch of Salt and Black Pepper
  • SAUCE:
  • 1 Jar of Tamarind Sauce
  • 8 oz of Mango Puree
  • 1?4 Cup of Sugar
  • Pinch of Salt
  • Pepper to Taste
  • TOPPINGS:
  • 1 Cup Parmesan Cheese
  • Arugula
  • Olive Oil
  • Prepared pizza dough

Directions:

  • Wash and rinse shark fillets under running water and squeeze the moisture out of each fillet and set aside in a clean bowl. Prepare the seasonings for the shark meat and rub gently ensuring each side is coated well. A 1/4 cup of oil can be used for proper distribution of seasonings. Let this marinate in the refrigerator for 6 hours or overnight.

  • In a small sauce pot over low heat, pour the tamarind sauce and the mango puree stir together. As the sauce begins to boil, add the remaining ingredients and cook for 10 minutes until thickened and reduced.

  • Prepare salsa by finely dicing all ingredients together and mixing together in a bowl. Taste salsa to confirm the sweetness and spice is to your liking. Seal tightly and let marinate in the refrigerator so the flavors can intensify.

  • Heat up a 1/2 cup of oil to 390 degrees C in a shallow frying pan. Lightly dust each fillet with the breading mixture and place in pan. Careful not to overcrowd the pan as the temperature of the oil will drop hindering from the fillets to crisp up as quickly. Let the fillets cook on one side for 3 minutes until golden brown; flip over and cook for another 2 minutes.

  • Using prepared pizza dough spread the sauce evenly around dough and bake in the oven at 375oC until the dough is crisp and the sauce is still slightly moist.

  • Assemble pizzas by placing the dough on a cutting board. Next chop the shark meat in small pieces and spread around the dough. Using the salsa evenly distribute it on top the shark meat ensuring every slice will have a taste. Cut pizza into desired slices and shapes.
