BAKED CHICKEN WITH CHERRY BRANDY

Complexity: Easy

Ingredients:

  • 4 – 6 skinless chicken breasts or thighs
  • 1 tsp salt
  • 1 tbsp lime juice
  • 1 tsp black pepper
  • 2 tbsp chopped chadon beni
  • 2 cloves garlic, crushed
  • 1 medium onion, chopped
  • 4 pimentos, seeded and chopped
  • 1 cup cherry brandy
  • 1 tbsp brown sugar

Directions:

  1. Season chicken with salt, black pepper, pimento peppers, lime juice, chadon beni and garlic.
  2. Preheat oven to 375 degrees F.
  3. Lightly spray a baking dish with cooking spray. Place the chicken in dish as well as onions.
  4. Mix together the brown sugar and brandy. Pour over the chicken.
  5. Sprinkle a little extra sugar over the chicken.
  6. Bake uncovered in preheated oven for 35 – 45 minutes or until chicken is cooked through and golden brown.
