- 4 – 6 skinless chicken breasts or thighs
- 1 tsp salt
- 1 tbsp lime juice
- 1 tsp black pepper
- 2 tbsp chopped chadon beni
- 2 cloves garlic, crushed
- 1 medium onion, chopped
- 4 pimentos, seeded and chopped
- 1 cup cherry brandy
- 1 tbsp brown sugar
Season chicken with salt, black pepper, pimento peppers, lime juice, chadon beni and garlic.
Preheat oven to 375 degrees F.
Lightly spray a baking dish with cooking spray. Place the chicken in dish as well as onions.
Mix together the brown sugar and brandy. Pour over the chicken.
Sprinkle a little extra sugar over the chicken.
Bake uncovered in preheated oven for 35 – 45 minutes or until chicken is cooked through and golden brown.
