BAKED POTATO AND HAM SALAD

Ingredients:

  • 8 medium potatoes
  • A few slices of ham finely chopped
  • 2 cups cheddar cheese grated
  • ½ onion finely chopped
  • 1 medium green pepper diced
  • 1 small carrot, grated
  • 1 cup whole kernel corn
  • 3/4 cup mayonnaise
  • 2 tsp mustard
  • Salt and black pepper to taste
  • 1 tbsp fresh green seasoning

Directions:

  1. Preheat oven to 350 degrees. Grease a small baking dish.

  2. Bring a large pot of salted water to boil. Add potatoes and cook just until tender, but still firm, about 15 minutes. Drain, peel, cool, and chop into 1-inch pieces.

  3. Combine potatoes, ham, 1 cup of cheese, onions, green pepper, carrot, corn, mayonnaise, mustard, green seasoning, salt and pepper. Mix well and spoon into greased baking dish.

  4. Top with remaining cup of cheese, generously sprinkling. Bake 25 – 30 minutes or until the potatoes are cooked through and the top is golden brown.
