BANANA AND COFFEE NUT BREAD

Ingredients

  • 4 oz margarine
  • 2 cups flour
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 3 large eggs
  • 3 large ripe bananas pureed
  • 1/2 cup instant coffee
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 3 tsp lemon or orange zest
  • 1/2 cup chopped almonds

Directions:

  1. Preheat oven 350 degrees for 15 mins. Grease 9×5 loaf pan.

  2. Mix together flour, baking powder, baking soda and salt

  3. Beat together butter and sugar at medium speed until light and fluffy

  4. Add eggs individually, beating well after each addition.

  5. Beat in bananas and coffee. Gradually add in flour mixture until well blended. Stir in lemon zest and nuts. Spoon batter into baking pan. Bake until risen, approximately 30 – 35 minutes and cooked through.
