Ready In: 30-35 minutes
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp vanilla essence
- 6 oz butter
- ¾ cup sugar
- 2 eggs
- 3 – 4 large ripe bananas, crushed (enough to yield 1 cup)
- ½ cup milk mixed with 1 tsp white vinegar
- ½ cup raisins
- 4 oz chopped walnuts
- ½ tsp ground cinnamon
Grease and flour 2 9 – inch cake pans. Preheat oven to 350 degrees F.
Cream butter and sugar until light. Add the essence and mix. Sift the dry ingredients together.
Add the flour to the butter alternately with the milk, ending with the flour.
Fold in the bananas, raisins and walnuts.
Divide the cake mixture evenly into the cake pans and bake in preheated oven for 30 – 35 minutes. Cake is done when a toothpick inserted into the center of the cake is clean when removed.
Let rest in pans for 2 – 3 minutes before turning onto a wire rack to cool completely. Slice and serve.
