Barbadine Punch

  • 1 ripe barbadine
  • 6 oz evaporated milk
  • 6 – 8 tbsp condensed milk
  • 1 cup sugar
  • Few dashes bitters
  • 3 – 4 cups water


    1. Peel skin from barbadine.
    2. Using a strainer over a bowl, place the seeds a little at a time in the strainer with a little water and squeeze the seeds and press the pulp though the sieve. The flavor of the barbadine is contained in the seeds, so press firmly to ensure maximum flavor is achieved.
    3. Add the remaining water, milk and sugar. Add the bitters.
    4. Taste and add additional sugar if necessary. Refrigerate and serve over ice.
