Ingredients:
- 1½ lb large shrimp, peeled and deveined
- (Seasoned with salt, pepper and lime juice)
- 1 cup flour
- 2/3 cup water
- 1 egg, beaten
- 1 tbsp fresh green seasoning
- 1 tsp baking powder
- ½ tsp salt
- ¼ tsp black pepper
- Extra flour for coating
- Oil for frying
- SALAD:
- Lettuce, chopped
- Whole Kernel Corn
- Tomatoes chopped
- Chopped hard Boiled eggs
- Diced sweet peppers
- Pinch of salt and black pepper
- Creamy salad dressing
Directions:
- Toss the salad ingredients together except for the dressing. Place in refrigerator until ready to serve.
- Make the batter. In a bowl, mix the flour, water, egg, baking powder, green seasoning, salt and black pepper until smooth. If batter is too thick, add a little more water. Let batter rest for at least 15 minutes.
- Heat oil in frying pan.
- Dip the seasoned shrimp, first in the flour and then the batter, letting the excess batter drip off. Immediately add to the hot oil and fry for 2 – 3 minutes or until shrimp is cooked and golden brown. Drain on absorbent paper.
- Place the prepared salad in serving bowls. Top with the shrimp. Drizzle with the dressing and serve.
