• 1½ lb large shrimp, peeled and deveined
  • (Seasoned with salt, pepper and lime juice)
  • 1 cup flour
  • 2/3 cup water
  • 1 egg, beaten
  • 1 tbsp fresh green seasoning
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Extra flour for coating
  • Oil for frying
  • SALAD:
  • Lettuce, chopped
  • Whole Kernel Corn
  • Tomatoes chopped
  • Chopped hard Boiled eggs
  • Diced sweet peppers
  • Pinch of salt and black pepper
  • Creamy salad dressing


  1. Toss the salad ingredients together except for the dressing. Place in refrigerator until ready to serve.
  2. Make the batter. In a bowl, mix the flour, water, egg, baking powder, green seasoning, salt and black pepper until smooth. If batter is too thick, add a little more water. Let batter rest for at least 15 minutes.
  3. Heat oil in frying pan.
  4. Dip the seasoned shrimp, first in the flour and then the batter, letting the excess batter drip off. Immediately add to the hot oil and fry for 2 – 3 minutes or until shrimp is cooked and golden brown. Drain on absorbent paper.
  5.  Place the prepared salad in serving bowls. Top with the shrimp. Drizzle with the dressing and serve.
