- 1 small pack of salted biscuits
- 1 cup all purpose flour
- 6 pieces fish fillets (king fish or carite)
- 2 tbsp finely chopped chives
- 1 tbsp chopped thyme
- 1 tbsp chopped parsley
- 2 pimento peppers finely chopped
- 5-6 cloves of garlic minced
- Juice of 1 lime
- Olive oil
- 1 tsp salt
- 1 dash of black pepper
- 2 eggs beaten
- Vegetable oil
Wash fish, pat dry and set aside.
Process biscuits in a food processor until fine.
In a small bowl combine chives, thyme, parsley, garlic, pimento peppers, lime juice, olive oil, salt and pepper.
Pour mixture over fish, coat properly and let marinate for at least an hour.
Place processed biscuits in a plate; place sifted flour in another plate seasoned with a teaspoon of all purpose seasonings; in a wide shallow bowl place beaten eggs.
Heat vegetable oil in a wide frying skillet.
Dip fish into the seasoned flour, then into the egg and then into the biscuit crumbs.
Fry fish pieces for about 3-4 minutes on either side until fish is golden brown in colour.
Drain on paper towels; sprinkle lightly with salt. Serve.
