  • 1 breadfruit
  • 1 can green peas
  • 1 can whole kernel corn
  • ½ small onion, finely grated
  • 6 tbsp mayonnaise
  • ½ tsp garlic powder
  • 1 tbsp vinegar
  • 1 tbsp sugar
  • Pinch of salt
  • Pinch of black pepper
  • 1 small sweet pepper, diced
  • 1 – 2 tbsp chopped celery leaves


  1. Cut breadfruit into quarters. Boil in salted water until fully cooked. A knife should be easily inserted into fruit without any resistance. Drain and set aside to cool.
  2. Peel and cut into cubes.
  3. In a bowl, add the mayonnaise, grated onion, garlic powder, vinegar and sugar. Add the celery and sweet pepper. Mix well.
  4. Add the cubed breadfruit, peas and corn. Taste and adjust seasoning.
  5. Mix and refrigerate until ready to serve.
