BROILED CURRIED KINGFISH

Ingredients:

  • 4 – 6 king fish fillets or slices
  • 2 tsp all purpose seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • Juice of 1 lime
  • 2 -3 blades shadon beni, finely chopped
  • 1 tbsp finely chopped celery
  • 1 tsp red pepper flakes
  • 1 tbsp curry powder
  • 1 tsp amchar masala
  • 1 tbsp ground geera
  • 2 – 3 tbsp oil
  • Cooking spray

Directions:

  1. Rinse fish fillets and pat dry. Place in a dish. Sprinkle all the ingredients except the oil over the fillets. Rub into the fish. Drizzle with the vegetable oil. Cover and leave to marinade for at least 1 hour.

  2. Preheat oven or broiler to 400 degrees F. Spray a broiler rack with cooking spray. Place the fillets on the rack.

  3. Drizzle with a little more oil.

  4. Place in oven and broil for 15 – 20 minutes depending on the thickness of the fillets. Remove from oven and serve.
