  • 1 large cassava bulb
  • Salt
  • Black pepper
  • Oil for deep-frying


  1. Peel and wash the cassava and pat dry with a paper towel. Slice the cassava very thinly with a mandolin.

  2. Heat oil over very high heat.

  3. Working in small batches, add the cassava slices to the oil.

  4. Fry 1 -2 minutes until golden brown.

  5. Remove from oil and place on paper towels. Immediately sprinkle chips with salt and pepper and serve.
