- 1 large cassava bulb
- Black pepper
- Oil for deep-frying
Peel and wash the cassava and pat dry with a paper towel. Slice the cassava very thinly with a mandolin.
Heat oil over very high heat.
Working in small batches, add the cassava slices to the oil.
Fry 1 -2 minutes until golden brown.
Remove from oil and place on paper towels. Immediately sprinkle chips with salt and pepper and serve.
