- 1 lb cassava bulbs
- ½ cup vegetable oil
- Black pepper
Peel and wash the cassava. Cut into 3 – inch chunks. Cook in boiling water until tender. Let cool. Remove the woody stem from the center of the cassava and discard.
Cut the chunks into thin slices similar to traditional fries.
Heat oil in a skillet.
In small batches, add the cassava to the oil and cook until crisp and golden brown. Remove and place on paper towel to drain.
Place fries in a bowl. Immediately sprinkle with salt and black pepper and toss to coat.
Serve with favorite dip.
