- 4 sandwich rolls, lightly toasted
- 8 – 12 Cheddar cheese slices
- 2 small sweet peppers or 1 large, roasted and peeled
- Slices of avocado, drizzled with a little lime juice
- Pepper sauce (optional)
Cut the rolls in half. Spread the bottom halves with mayonnaise.
Place the avocado slices on top, followed by the peppers and cheese. Dot with a little pepper sauce if using.
Spread the top halves with mustard, cover and enjoy.
