- 6 hard-boiled eggs
- 1 oz butter
- 1 oz flour
- 1 cups milk
- 1/2 tsp fresh green seasoning
- 1/2 tsp mustard
- 1 cup grated cheddar cheese
- ¼ cup grated Parmesan cheese
- Salt and pepper
- ¼ tsp all purpose seasoning
- 2 tbsp chopped chives
- ½ cup grated cheese for the top
Lightly butter or coat a baking dish with cooking spray.
Cut the eggs in half. Place them yolk side down in the dish.
In a pan, melt the butter or margarine over medium heat. Add the flour and stir for 1 minute. Add the milk and stir continuously until thickened.
Add the cheeses and green seasoning. Stir until smooth. Add the all purpose seasoning, mustard and chives. Season with salt and pepper to taste.
Pour the sauce over the eggs. Sprinkle with the remaining grated cheese.
Bake in a preheated oven (350 degrees) for 10 – 15 minutes or until the top is golden brown. Serve immediately.
