- 3-4 lbs cassava – peeled
- 1 lb saltfish (salted cod), preferably boneless
- 10-12 cloves garlic
- 3-4 tbsp oil
- 8-10 seasoning peppers seeded and cut up
- Pinch of salt
Soak saltfish overnight. Squeeze out water and remove all bones if any.
Boil cassava, cool and cut up in large pieces. Discard hard vein in middle. Set aside.
In a large iron pot, heat oil, and cloves of garlic and let it burn until black. Remove burnt ga
Immediately add seasoning peppers and saltfish. Fry about 2-3 minutes.
Add cassava, stir to coat cassava with saltfish & oil mixture.
Simmer on low heat in covered pot for approximately 30 minutes.
