Ready in: 20-25 minutes
- 2 cups flour
- 2 tsps. baking powder
- 1/8 tsp. salt
- 1 egg
- 2 tbsp. milk
- ½ cup sugar
- 2 ozs. Margarine
- 1 cup grated coconut
- 1 tsp. vanilla essence
- ½ cup raisins
Grease and flour muffin pans. Set aside. Preheat oven to 350 F.
Sift dry ingredients together in a mixing bowl – flour, baking powder, salt.
Add margarine and cut in with two knives until it resembles breadcrumbs.
Add sugar and coconut.
Beat egg, add milk and vanilla essence.
Add liquid to dry ingredients and mix well.
Fill muffin tins 2/3 full and bake for 20 minutes. Cool on wire rack. Makes one dozen.
