- 1 dry coconut
- 1½ cups water
- 1 tin condensed milk
- 1 cup sugar
- ½ tsp almond essence
- 1 oz butter
Grate coconut, add water and squeeze through a strainer to extract all the coconut juice.
In a heavy duty pot, mix all ingredients except butter. Cook over a medium heat stirring constantly. Mixture will thicken and leave the side of the pan.
Remove from heat and beat with a wooden spoon until the mixture thickens and loses gloss.
Pour into a greased dish. Using a knife cut the fudge into squares. Leave to cool and store in an airtight container.
