- 1 dry coconut, flesh removed
- 1 tin condensed milk
- 1 tin evaporated milk
- 3 tbsp unflavoured gelatin (heaped)
- ¼ – ½ cup sugar (optional)
- 1 tsp vanilla essence
- Dash of bitters
Grate coconut and pour some water over it. Put in a cheesecloth or sieve and squeeze out milk into a bowl. You may need to add some more water to extract all the coconut milk.
Melt gelatin in ½ cup hot water to dissolve.
Add all other ingredients and mix well. Taste and adjust sweetness if necessary.
Lightly butter dish, pour in mixture and place in refrigerator to set for a few hours until firm.
