Coconut Raisin Fudge

  • 1½ cups coconut milk
  • 1½ cups sugar
  • 1 tin condensed milk
  • 1 tsp vanilla essence
  • ½ cup raisins


  1. Lightly grease a small, square glass dish and set aside.
  2. In a medium pot over a low heat, combine the coconut milk and sugar. Increase the heat to medium high and allow mixture to begin to boil, stirring constantly.
  3. Add the condensed milk. Reduce heat and continue to stir for approximately 5 minutes and mixture begins to thicken. At this stage test the mixture by dropping a small amount into a little cold water. If a firm ball forms, then the mixture can be removed from the heat.
  4. Once it is removed from the heat, add the essence.
  5. Beat well with a wooden spoon, until it is thick and creamy. A hand held electric mixer may also be used.
  6. Pour into prepared dish to cool. Halfway through cooling time, the fudge may be cut into squares.
  7. Store in an airtight container.
