- 1½ lbs flour
- 6 tsp bakiing powder
- 2 cups sugar
- 2 tsp ground cinnamon
- 3 tsp ground nutmeg
- ½ tsp ground cloves
- ½ lb butter
- 1 finely grated fresh coconut
- 1½ cups water
- 2 tsp vanilla essence
- 2 eggs
- 2 cups raisins
- 2/3 cup chopped cherries, green and red
- ½ cup sugar syrup
- Sugar for sprinkling
Preheat oven to 350 degrees F. Lightly grease two loaf/bread pans and set aside.
In a large bowl, combine flour with sugar, baking powder and dried spices. Add butter and mix into the flour.
Mix coconut with water, and eggs, stir briskly .
Add to flour mixture with a little more water if needed to make a soft dough.
Add fruits and stir.
Spoon batter into the prepared loaf pans.
Bake for about approximately 1 hour and 15 minutes then brush the sweet bread with a sugar syrup and sprinkle with granulated sugar.
Place in oven for another 10 minutes.
Remove from oven and let sit for approximately 5 minutes before removing from pan. Let cool a little before slicing.
Sugar syrup – Add 2 cups granulated sugar and 1 cup water to a small pot. Bring to a boil, stirring frequently until the sugar is dissolved. Remove from heat and cool. Use as desired. The remainder may be stored in refrigerator for up to 1 month.
