CORN AND CHANNA (CHICKPEA) SALAD

Complexity: Easy

Ingredients:

  • 1 can channa, drained
  • 1 can whole kernel corn, drained
  • 1 small red or green sweet pepper, diced
  • 1 medium tomato, diced
  • ½ onion finely diced
  • ½ tsp chopped shadon beni
  • 1 tsp fresh green seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar

Directions:

  1. In a medium bowl, mix together the green seasoning,shadon beni, salt, pepper, red wine vinegar, balsamic vinegar and olive oil.

  2. Add the remaining ingredients.

  3. Mix well and refrigerate for at least ½ hour before serving
