CRANBERRY COFFEE PROTEIN PANCAKES

Complexity:  Easy

Ingredients:

  • 2 cups oatmeal
  • 1 scoop protein powder coffee flavor or add 1 tbsp of coffee to your mixture
  • ½ cup dried cranberries or jellied from the tin
  • 1 tsp baking powder
  • 1 cup of water or as needed to form a batter
  • Cooking spray
  • CARAMELIZED APPLES/ BANANA OR PEAR
  • 2 apples core and sliced
  • 1 tsp cinnamon
  • 1 tbsp honey
  • 1/2 cup wate

Directions:

  1. Pancakes: Mix all ingredients together and set aside.
  2. Heat pan coconut oil in a pan and cook pancakes 3 min on each side.
  3. Apple topping: Simmer all ingredients in a sauté pan until sauce thickens
  4. Server hot over pancakes
