- 3 cups water
- 2 chicken bouillon cubes
- 1 can chicken broth
- ½ cup diced onion
- ¾ cup diced pumpkin
- 1 cup sliced carrots
- 1 ½ cups diced potatoes
- 1 ½ cups sliced fresh mushrooms
- 1 cup small pasta shells
- 2 chicken breasts, cooked and diced
- 1 tsp dried parsley
- 4 blades chives, chopped
- ¾ cup heavy cream
- Salt and pepper to taste
Bring water to a boil. Add the bouillon cubes and stir to dissolve.
Add the onion, pumpkin, carrots and potatoes. Cook for approximately 5 – 10 minutes.
Add the chicken broth, mushrooms and pasta shells. Let cook for a further 10 minutes or until the pasta is cooked. Reduce to a medium heat.
Add the cooked chicken, parsley and chives. Add the cream and salt and black pepper.
Reduce heat to a simmer. Let simmer for 5 more minutes. Taste and adjust seasoning if necessary. Serve.
