CREAMY CHUNKY CHICKEN SOUP

Complexity: Medium

Ingredients:

  • 3 cups water
  • 2 chicken bouillon cubes
  • 1 can chicken broth
  • ½ cup diced onion
  • ¾ cup diced pumpkin
  • 1 cup sliced carrots
  • 1 ½ cups diced potatoes
  • 1 ½ cups sliced fresh mushrooms
  • 1 cup small pasta shells
  • 2 chicken breasts, cooked and diced
  • 1 tsp dried parsley
  • 4 blades chives, chopped
  • ¾ cup heavy cream
  • Salt and pepper to taste

Directions:

  1. Bring water to a boil. Add the bouillon cubes and stir to dissolve.
  2. Add the onion, pumpkin, carrots and potatoes. Cook for approximately 5 – 10 minutes.
  3. Add the chicken broth, mushrooms and pasta shells. Let cook for a further 10 minutes or until the pasta is cooked. Reduce to a medium heat.
  4. Add the cooked chicken, parsley and chives. Add the cream and salt and black pepper.
  5. Reduce heat to a simmer. Let simmer for 5 more minutes. Taste and adjust seasoning if necessary. Serve.
