• 7-8 medium potatoes
  • 1 tablespoon of apple cider vinegar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 eggs
  • 4 garlic cloves, minced
  • 6-7 blades of chive chopped
  • 1 tablespoon celery chopped
  • 1 onion finely chopped
  • 1 sweet pepper, finely chopped
  • 1 medium carrot, grated
  • ½ cup whole kernel corn


  1. Scrub and wash potatoes. Place potatoes in a large pot and add enough water to cover, bring to boil and cook for about 20 minutes, until fork tender. Do not over cook and allow potatoes to get mushy in texture. Drain in a colander and transfer to a glass bowl, sprinkle with salt, black pepper and vinegar, toss to coat and allow to rest for 30 minutes.
  2. Meanwhile in another pot place eggs in water and bring to a boil. After 15 minutes, drain and allow to cool. Remove shells and chop.
  3. Add eggs to potatoes, and then add garlic, chives, celery, onion, carrot. sweet pepper, corn. Gently mix together.
  4. In a small bowl, mix all ingredients for dressing. Pour over potatoes and mix gently. Refrigerate until ready to serve.
  5. OPTIONAL – (a) For you cheese lovers, you can stir in small cubes of cheddar cheese. (b) For a fruity finish, add some cubes of apple.
