- 1 cup roasted corn kernels
- 1½ cups fresh whole tomatoes diced
- 2 tsp red onion, finely diced
- 4 tbsp fresh cilantro chopped/1 tsp shadon beni
- ½ lime, juiced
- 3 tsp olive oil
- Pinch of sugar
- Salt and pepper to taste
- Pinch of geera (optional)
- Your favourite Crix crackers
- Mix all the ingredients in a mixing bowl. Adjust salt and lime to suit.
- Enjoy with your favourite Crix crackers.
