  • 3 large cucumbers
  • 3 blades chives, chopped
  • ¾ cup crumbled feta cheese
  • ½ small red onion, thinly sliced
  • Juice of 1 lime or lemon
  • Pinch salt
  • Pinch of black pepper
  • 1 tbsp vinegar
  • 2 tbsp olive oil


  1. Peel the cucumber and cut in half lengthwise. Remove the seeds. Cut into thin slices and place in bowl.
  2. Add the sliced red onion and chives.
  3. Toss gently and spread the cucumber mixture in a shallow dish.
  4. Sprinkle the crumbled feta over the cucumbers.
  5. Mix together in a small bowl, lime juice, salt, black pepper, vinegar and olive oil.
  6. Drizzle over the salad. Refrigerate until ready to serve.
