- 2 lbs crab, cleaned
- 3 leaves shadon beni,chopped
- 2 – 3 blades chive, chopped
- 4 sprigs thyme, chopped
- 4 large cloves garlic, chopped
- 2 large pimento peppers, chopped
- ½ hot pepper, finely chopped (optional)
- 2 large limes
- 1 tsp five spice powder
- 1 large onion, chopped
- Salt and black pepper
- 2 ½ tsp curry powder
- 3 curry leaves
- 2 whole cloves garlic, peeled
- 2 ½ tsp vegetable oil
- 2 tsp cumin (geera powder)
- ¼ cup water
- Additional water
Wash crab with 1 lime to remove freshness. Squeeze remaining lime juice on crab. Add the chive, thyme, chadon beni, garlic, onion, pimentos, hot pepper, five spice powder, salt and black pepper. Mix well and leave to marinate for at least 1 hour.
In a large pot, heat oil. Add the whole garlic cloves and curry leaves and leave to brown.
Mix the curry powder and water and mix well. Add to the garlic and curry leaves. Stir for 1 minute then add the seasoned crab. Mix well ensuring the curry covers all the crab.
Sprinkle the cumin powder and mix well. Add some water to prevent burning.
Cover pot and leave to cook for approximately 45 minutes, stirring occasionally.
Taste and adjust seasonings and serve.
