Complexity: Easy


  • 8 hard boiled eggs, peeled and halved
  • 2½ tbsp mayonnaise
  • 1 tsp mustard
  • 1 tbsp curry powder
  • ½ tsp cumin
  • Juice of ½ lime
  • Pinch of ground black pepper
  • Pinch of salt to taste
  • 1 tbsp minced shadon beni
  • 1 tsp minced onion
  • 1 can tuna, drained
  • 1 tsp pepper sauce
  • 1 tsp Worcestershire sauce
  • Diced sweet pepper and paprika to garnish



  • Place the egg yolks in a bowl and the whites in a serving dish.

  • Add generous pinches of salt and black pepper to the yolks and mash together with a fork. If doubling the recipe, a hand mixer works well here.

  • Add the remaining ingredients to the yolks, except those for garnish.

  • Mix together until the mixture is almost smooth. Taste and adjust seasoning if necessary. Pipe or spoon the mixture into the egg whites.

  • Top each egg with a diced pepper and sprinkle with a little paprika. Refrigerate until ready to serve.
