- 8 hard boiled eggs, peeled and halved
- 2½ tbsp mayonnaise
- 1 tsp mustard
- 1 tbsp curry powder
- ½ tsp cumin
- Juice of ½ lime
- Pinch of ground black pepper
- Pinch of salt to taste
- 1 tbsp minced shadon beni
- 1 tsp minced onion
- 1 can tuna, drained
- 1 tsp pepper sauce
- 1 tsp Worcestershire sauce
- Diced sweet pepper and paprika to garnish
Place the egg yolks in a bowl and the whites in a serving dish.
Add generous pinches of salt and black pepper to the yolks and mash together with a fork. If doubling the recipe, a hand mixer works well here.
Add the remaining ingredients to the yolks, except those for garnish.
Mix together until the mixture is almost smooth. Taste and adjust seasoning if necessary. Pipe or spoon the mixture into the egg whites.
Top each egg with a diced pepper and sprinkle with a little paprika. Refrigerate until ready to serve.
