  • 6 pork chops
  • 1-cup brown sugar
  • ½ cup of ketchup
  • ¼ cup of soy sauce
  • ¼ cup Worcestershire sauce
  • ½ cup rum
  • 3 blades chive, chopped
  • 2 – 3 sprigs thyme
  • ½ cup of chili garlic sauce
  • 1 medium onion, finely chopped.
  • 5 cloves of garlic, crushed
  • 2 teaspoons of mustard
  • A couple dashes of black pepper


  1. To make barbecue sauce – In a large bowl combine brown sugar, ketchup, soy sauce, Worcestershire sauce, rum,chives,thyme, chili sauce, garlic, onions, mustard and black pepper. Stir and mix thoroughly.
  2. Divide pork chops, place 3 each in two large freezer bags and then divide barbecue sauce evenly in two bags, leaving some aside for basting. Rub and coat pork chops. Refrigerate and allow to marinate for at least 6 hours or overnight.
  3. Preheat oven to 350 degrees. Remove pork chops from bag and place in a greased baking dish and bake uncovered, for 1 hour, basting with remaining sauce intermittently.
