- 6 – 8 medium ripe tomatoes
- ½ medium onion, chopped
- 3 – 4 cloves garlic, finely minced
- 2 – 3 pimento peppers, thinly sliced
- 3 tsp vegetable oil
- Salt and black pepper
- Pepper Sauce or small piece of hot pepper (optional)
Heat oil in a pot over medium heat.
Add the garlic, onion, and peppers, (hot pepper if using) and stir until the vegetables begin to turn light brown. Add the tomatoes. Season with a little salt and black pepper.
Cover and let cook for approximately 10 – 15 minutes, stirring intermittently until the tomatoes are a sauce like consistency.
Add a little water if the mixture is too dry. Add a little pepper sauce, (if using instead of the hot pepper), if desired.
Serve with sada roti.
