FRIED TOMATO CHOKA

Complexity: Easy

Ingredients:

  • 6 – 8 medium ripe tomatoes
  • ½ medium onion, chopped
  • 3 – 4 cloves garlic, finely minced
  • 2 – 3 pimento peppers, thinly sliced
  • 3 tsp vegetable oil
  • Salt and black pepper
  • Pepper Sauce or small piece of hot pepper (optional)

Directions:

  1. Heat oil in a pot over medium heat.
  2. Add the garlic, onion, and peppers, (hot pepper if using) and stir until the vegetables begin to turn light brown. Add the tomatoes. Season with a little salt and black pepper.
  3. Cover and let cook for approximately 10 – 15 minutes, stirring intermittently until the tomatoes are a sauce like consistency.
  4. Add a little water if the mixture is too dry. Add a little pepper sauce, (if using instead of the hot pepper), if desired.
  5. Serve with sada roti.
