- 1 cup chopped onions
- ¾ cup of apple juice
- 1 apple cored and sliced
- 1 cup of pineapple chunks
- ½ cup raisins
- 5 pork chops, bone in
- Salt and pepper to taste
- ½ cup ketchup
- Few dashes Worcestershire sauce
- 5-6 cloves of garlic, finely chopped
- 1 tsp of grated ginger
- 1 tbsp of mustard
- ¼ tsp of ground cinnamon
- 1 tbsp of brown sugar
Combine ketchup, mustard, Worcestershire sauce, apple juice, cinnamon, brown sugar, garlic, ginger, salt and pepper. In a large dish coat pork chops with marinade. Leave in refrigerator overnight.
Heat oil in a large skillet; sauté onion, apple, pineapple, and raisins for 8-10 minutes. Remove onion and fruit mixture and set aside.
Pre-heat oven to 375 degrees F.
Transfer pork chops with marinade in a greased baking dish. Top with onion and fruit mixture. Cover with foil and bake for 45 minutes – 1 hour depending on the thickness of the chops.
