- 3-4 sweet potatoes, peeled and chopped in big chunks
- 4-5 blades of chives, chopped
- 6 garlic cloves, minced
- 1 tbsp chopped parsley
- Olive oil
- Salt and pepper to taste
Combine sweet potatoes, with chives, parsley and minced garlic cloves.
Drizzle with olive oil and season with salt and pepper and toss.
Place potato mixture on a sheet of foil and fold up; place on a baking sheet.
Roast in oven at 400 degrees F until the potatoes are tender, 20 to 25 minutes.
