GINGER BEER

Complexity: medium

Ingredients:

  • 1 lb ginger root
  • 4 pints cold water
  • Few dashes bitters
  • 1 – 2 small limes
  • Sugar to sweeten

Directions:

  1. Wash and remove skin from ginger and cut into smaller pieces. Place in a large bottle.
  2. Add the water, juice from limes and the lime skin. Leave in the sun for one day.
  3. The following day, preferably in the afternoon, strain and sweeten to taste.
  4. Pour into clean bottles and refrigerate. Allow to settle for two days.
  5. If too strong, plain soda may be added. Refrigerate until ready to use.
  6. Serve with ice and a dash of bitters.
