- 1 head romaine lettuce, chopped
- ½ small red onion, thinly sliced
- 1 small sweet pepper, thinly sliced
- 1 – 2 tomatoes, chopped
- 1 cup whole kernel corn
- 1 cup black beans
- Juice of 1 – 2 limes
- 1 tsp chopped parsley
- 3 tbsp olive oil
- Pinch of salt
- Pinch of pepper
In a salad bowl, add the corn, black beans, onion and sweet pepper. Sprinkle with a dash of salt and black pepper.
Mix together the lime juice, parsley, olive oil, salt and pepper. Taste and adjust seasoning if necessary.
Add to the corn mixture and mix well.
Add the lettuce and toss well to combine. At this point you can rest the lettuce over the mixture, cover and refrigerate. Then toss when ready to serve so that the lettuce would not wilt.
