- 8 oz butter or margarine
- 8 tbsp icing sugar
- 1 tbsp vanilla essence
- 3 – 3½ cups sifted flour
- ¼ tsp salt
- Guava jam
- Granulated sugar
Cream margarine and icing sugar until light.
Add the remaining ingredients except the guava jam and granulated sugar. Mix well until the ingredients come together in a soft but firm dough. The dough should be able to be shaped easily and hold.
Preheat oven to 350 degrees F.
Using hands, form the dough into even sized balls and place on a greased baking sheet. Flatten slightly. Using the end of a chopstick or wooden spoon, form a small indentation in the centre of each cookie.
Fill the centre with guava jam and sprinkle the cookie with a little sugar.
Bake in the preheated oven for 30 – 35 minutes. Remove and let cool on a wire rack before serving.
