- 4½ cups all purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- Pinch of salt
- ½ cup warm water
- ½ small sachet active dry yeast
- 1 tbsp sugar
- 1 cup plain yogurt
- ¾ cup warm milk
- Olive oil for brushing
- Extra sea salt to sprinkle (optional)
Sift together flour, salt, baking powder and baking soda in a bowl. Set aside.
Mix together the warm water, sugar and yeast in a bowl until dissolved. Leave for 8 – 10 minutes or until the yeast rises to the surface. Add the warm milk and yogurt and stir to combine.
Add this mixture to the flour mixture and mix with a spatula until the dough comes together. Turn out onto a floured surface and knead just until smooth, approximately 1 minute. Place dough back in bowl, cover and leave to rise.
When the dough has doubled in size, punch down and form into even sized balls. Roll the balls into a long, oval shape and about ¼ inch thick.
Heat a large frying pan, cast iron pan or tawah over a high heat. Lightly brush one side of a nan with olive oil. Place the oiled side down in the hot pan. When the bubbles form on the surface, after1 – 2 minutes, turn onto the next side to finish cooking for another minute. Remove and repeat with remaining nan.
