Ingredients:
- 2 tbsp oil
- 3 cloves garlic, finely chopped
- 1 box frozen spinach, thawed
- ¼ cup diced onions
- ¼ cup diced sweet peppers
- 1 cup fresh mushrooms, sliced
- ½ tsp red pepper flakes
- Salt and black pepper to taste
- 8 oz cream cheese
- 2 tbsp mayonnaise
- 2 cups shredded cheddar cheese
- ½ cup grated parmesan cheese
Directions

Remove spinach from box and place in a clean kitchen towel. Squeeze until all the water is drained. Remove spinach and set aside.

In a medium saucepan, heat oil over medium – high heat. Add the onions and sweet peppers. Cook for 1 minute until a little tender. Add the mushrooms and garlic. Stir to combine and cook for a few minutes, ensuring the garlic does not burn.

Add the red pepper flakes and salt and pepper.

Add the spinach and stir into the mushroom mixture. Allow to cook for a few minutes more. Taste and adjust seasoning. Remove from heat and allow to cool.

Preheat oven to 400 degrees F.

In another bowl, mix together the cream cheese, parmesan cheese, cheddar cheese and mayonnaise.

Add the cooled spinach mixture and mix.

Spray a baking dish lightly with cooking spray. Place the mixture in dish.

Bake in the preheated oven for 20 – 25 minutes or until the mixture is bubbling and golden brown. Remove from oven and serve immediately with your favorite tortilla chips and/or crackers.
