SPINACH AND MUSHROOM CREAM SAUCE

We use this rich sauce mainly with roasted pork, beef and fish.

An extra "peppery" take on salsa.

SPICY COCOA MARINADE

We were inspired by DEK'S COCOA PEPPER RELISH, which we used in this marinade to impart a unique sweet and peppery flavour to a roasted pork loin. We are certain it would taste delicious on steak as well, especially grilled. The relish is hot, (Dek's uses Trinidad Moruga Scorpion Pepper in this relish), so you may want to add a different amount for your heat preference.

JOEL'S DRY SPICE RUB

This rub is perfect for grilling and oven roasting steaks, ribs and chicken.

ROASTED GARLIC CREAM

We use the Roasted Garlic from Tropickle Foods as a convenient shortcut for the roasted garlic flavor. We use this cream to add to mashed potatoes or as a base for a creamy pasta sauce.

RELLA'S DEVILISH DIP

We used DEK'S Moruga Scorpion Pepper(very hot)for the heat. This is a versatile spicy sauce that we use for meatballs, shrimp, chips, vegetables and much more. Also tastes great with shrimp slices !

JOAN'S CARALIE (BITTER MELON) CHOW

Joan from Tunapuna, shared with us one of her favourite ways to use that vegetable known for it's bitterness. She uses this mainly as a condiment, (she loves it with a good pelau), but also enjoys it on its own.
