Joel EATS – Garlic and Rosemary

A marriage made in heaven! Garlic and Rosemary are two of my favourite flavors.

This weekend I decided to give my wife a Sunday to do whatever she liked and I jumped into the kitchen.

My small kitchen garden sprouted a healthy bunch of rosemary over the last few days, every time I walked past my little garden the earthy fragrance of rosemary filtered through my nostrils.

So I clipped a few sprigs, topped on some garlic and made it my theme for my Sunday menu.

Rosemary is one of the herbs that I truly love; it adds a woody, earthy burst of flavor that I enjoy.

Rosemary is however, very potent and can dominate and take over a dish and that is not what you want. Ideally this unique herb should just be a highlight in your dish, a hint of rosemary really goes a long way.

In recent times Salmon has been my go-to fish in … this Salmon recipe could become one of my new favourites.

I seasoned 6 fillets with salt, pepper, garlic, dried and fresh rosemary and allowed it to marinate covered for at least 6 hours … I then placed pairs of fillets in a foil pouch with a rosemary sprig and baked it for 15-20 minutes…

It was amazingly fragrant … Salmon is also great because it  takes on different flavors so well.

Stewed Lentil peas are an old favorite of mine … but I don’t know how many people know what a big difference rosemary makes to this simple dish.

Once again don’t add too much … one fresh sprig chopped can be added during the cooking of the peas and a pinch of dried rosemary is a perfect touch at the end.
