Chef Damaim Davis is curently the Assistant Executive Chef at Samurai Restaurant and can be seen displaying his creative flair at the tappan table. He chatted with us letting us know what foods make him tick.


TC: What 3 ingredients do you always have in your refrigerator?

DD: Pork, butter, eggs. If I don't have pork in my fridge, something is wrong.

TC: What is the first meal you remember cooking?

DD: Stewed chicken and rice at age 11.

TC: What is your favourite dish to cook?

DD: Anything with pasta and I love corned beef with macaroni

TC: Your favorite comfort food?

DD: Chicken Alfredo

TC: What food is your guilty pleasure?

DD: Ceviche with tilapia

TC: What luxury ingredient do you enjoy using the most?

DD: Parmesan cheese

TC: What is the most unusual thing you have ever eaten?

DD: Snails

TC: Choose three people who you would love to have dinner with?

DD: Anthony Bourdain (he's my chef inspiration), Destra and Patrick Manning.

TC: Is there anything thing you don’t like to eat?

DD: I will try everything except snake meat.

TC: If you were not a chef, what would you be?

DD: A business manager.
