MANGO KUCHELA

Ingredients

  • 30 -35 firm green mangoes, peeled and grated
  • 1 ½ tbsp salt
  • 3 tbsp ground amchar masala
  • 3 – 4 scotch bonnet peppers, minced
  • ¾ cup mustard or vegetable oil

Directions

  1. Place the grated mangoes in a cheesecloth and squeeze out as much liquid as possible.

  2. Spread the mangoes on a large tray and let dry in sun for 1 – 2 days.

  3. When dried, sprinkle with salt and ground amchar masala. Place in a bowl and add the minced pepper. Mix well.

  4. Heat oil over medium heat until very hot. Add heated oil to mangoes and mix well. Let cool and bottle.
