CURRY MANGO 2

Ingredients

  • 4 -5 green mangoes, seed removed
  • 4 tsp curry powder
  • 1 tsp amchar masala
  • 1½ tsp salt
  • 8 – 10 cloves garlic, grated
  • ½ scotch bonnet pepper, finely chopped
  • ½ cup sugar
  • 1 – 2 tsp oil

Directions

  1. Bring a medium pot of water to boil. Add a pinch of salt and the mangoes. Let cook for 20 minutes. Strain the mangoes, reserving about ½ cup of the cooking liquid.

  2. Heat oil in a pot.

  3. In a small bowl, mix the curry powder and amchar masala with a little water to form a paste.

  4. Add the paste to the hot oil, stirring quickly.

  5. Add the grated garlic and pepper. Add the mango, sugar and salt.

  6. Leave to cook for approximately 5 minutes.

  7. Add the reserved cooking liquid, mix well and serve.
