Ingredients

  • 1 whole chicken
  • 1/2cup soy sauce
  • 2 sprigs Shandon Beni
  • 3 sprigs Chive
  • 3 leaves Broad Leaf thyme
  • 5 cloves garlic
  • 3 pimentoes
  • Salt n Pepper to taste
  • 1 can Carib beer
  • SORREL SAUCE
  • 1 pack dry sorrel
  • Bay leaf
  • 2 cinnamon sticks
  • 3 cloves
  • 2 cups vinegar
  • 3 Cups sugar

Directions

  1. Wash and clean whole chicken.

  2. Blend all other ingredients together and marinate chicken for 3 hours.

  3. Open can of beer and place chicken to sit on can with the can going into its cavity.

  4. Ensure chicken balances on can before placing in oven for 45mins at 350F.

  5. Sorrel Sauce: Boil all ingredients together until sorrel flourish and a sweet n sour flavor profile emits. Serve hot over chicken.
