Cheese, Avocado and Roast Pepper Sandwiches

Ingredients

  • 4 sandwich rolls, lightly toasted
  • 8 – 12 Cheddar cheese slices
  • 2 small sweet peppers or 1 large, roasted and peeled
  • Slices of avocado, drizzled with a little lime juice
  • Mayonnaise
  • Mustard
  • Pepper sauce (optional)

Directions

  1. Cut the rolls in half. Spread the bottom halves with mayonnaise.

  2. Place the avocado slices on top, followed by the peppers and cheese. Dot with a little pepper sauce if using.

  3. Spread the top halves with mustard, cover and enjoy.
