CURRY MANGO 1

Ingredients

  • 6 green mangoes (preferably long mango)
  • 1 heaping tbsp curry powder
  • 4 cloves garlic, grated
  • 1 tbsp sugar
  • 1 tsp garam masala
  • 2 tbsp oil
  • ½ scotch bonnet pepper (optional)
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 11/2 – 2 cups water

Directions

  1. Wash and dry mangoes. Cut off the ends of the mangoes with a large knife. Chop the mangoes (including skin and seed) lengthwise. Each mango should yield 4 – 6 pieces. Set aside.

  2. Mix the curry powder in enough water to form a paste, approximately ¼ - ½ cup.

  3. Heat the oil in a heavy duty pot.

  4. Add the garlic and the curry paste. Cook over a low heat stirring constantly for about 2 – 3 minutes until thick.

  5. Add the mangoes, water, salt, black pepper, sugar, garam masala and hot pepper if using.

  6. Cover and cook until mangoes are tender. Taste and adjust seasoning if necessary.
