CANTALOUPE AND PINEAPPLE SALAD

Ingredients

  • 1 ripe cantaloupe
  • 1 cup fresh diced pineapple
  • ½ cup vodka
  • 1 – 2 tbsp chopped shadon beni
  • ¼ cup chopped red onion
  • Salt and black pepper

Directions

  1. Peel, seed and cut the cantaloupe into cubes. Place in a medium glass bowl.

  2. Add pineapple, vodka, shadon beni, and onion.

  3. Add a pinch of salt and black pepper to taste. Mix well.

  4. Refrigerate for at least 1 hour for the flavors to blend. Serve chilled.
