Saltfish Salsa

Ingredients

  • 1 lb saltfish
  • ½ cup chopped tomatoes
  • ½ cup chopped onion
  • 2 oz chopped red bell pepper
  • 2 oz chopped yellow bell peppers
  • 2 oz chopped green sweet pepper
  • 1 tbsp finely chopped chive
  • 1 tbsp finely chopped celery
  • 1 tbsp crushed shadon beni
  • 2 oz coconut oil
  • Hot pepper to taste

Directions

  1. Soak saltfish in cold water overnight.
  2. Place saltfish in pot with cold water.
  3. Boil for 10 -15 minutes and drain.
  4. Remove skin and bones. Shred finely.
  5. Saute all other ingredients in coconut oil for 5 minutes.
  6. Remove from stove. Add the fish and mix until well blended.
